Macaroni Menu ~ Buffalo Chicken Meatballs

A Super Bowl Winner!

Football games just aren't the same without wings.  Well, this year, put a twist on those messy wings and try these fabulous Buffalo Chicken Meatballs.  The great thing about these is that you don't have people struggling to eat wings, worrying about what to do with their bones and their ridiculously messy face and hands.  I love a neat appetizer!

1 pound of ground chicken
1/2 of one medium onion chopped
2 cloves of garlic grated or finely chopped
1 tablespoon of Lawry's Seasoning Salt or your favorite seasoning salt
1 egg
1/2 cup of plain bread crumbs
3/4 Frank's Hot Sauce Buffalo Style
2 tablespoons of butter

Heat oven to 400. Line a cookie sheet with parchment paper.

Mix everything accept the Frank's Hot Sauce and the butter in a bowl.  I use my hands to mix; some people prefer a food processor but I hate doing dishes so adding one more to the mix isn't happening.

I use a melon baller/cookie scoop to scoop the meat and roll into balls. 

Bake for 10 - 13 minutes.  While meatballs are cooking, heat Frank's Hot Sauce and butter in a small sauce pan. 

Once meatballs are done, place them in the sauce pan to coat or you can leave the sauce on the side and allow people to dip the meatballs.  You can also toss some in BBQ sauce for kids that don't like hot.

Serve with Ranch Dressing (or Blue Cheese if you prefer) and celery/carrots.  Enjoy!
