I couldn't find any info on the origin of National Homemade Soup Day or why it is every Feb. 4th. But if you google National Homemade Soup Day, it really is a “Day” and it seems like a good thing to celebrate. After all, soup is such a comfort food. When you have a sore throat – soup feels good to the throat. When you have a stomach ache – soup seems to soothe. And when you want a hearty one dish meal homemade soup is hard to beat. I love soups that can be fixed in the crock pot. It’s a one dish meal that can be ready when you get home from work. Here is my version of a wonderful crock pot Chicken Enchilada Soup.
Chicken Enchilada Soup
½ cup chopped onion
3 cloves garlic, minced
2 tsp olive oil
4 cups chicken broth
8 oz tomato sauce
1 chipotle chili (in adobe sauce)
Large can of black beans, drained
14.5 oz petite diced tomatoes
2 cups frozen corn
16 oz chicken breast
Taco seasoning to taste
Saute onion and garlic in oil 3 minutes. Add chicken broth, tomato sauce and chipotle chili. Bring to a boil. Pour in crock pot. Add beans, diced tomatoes, corn, taco sauce and chicken. Cover and cook on low for 4-6 hours. (I put in frozen chicken breast and so I cooked it about 8 hours).
Shred chicken before serving. Top with sour cream and cheese if desired. Mmmm…this is so good.
