Macaroni Menu ~ Crunchy Raisin French Toast

Stuffed with Strawberries and Cream Cheese

Crunchy french toast, fresh strawberries and cream cheese make a great treat for any mom on Mother's Day!

Ingredients:
4 eggs
1/4 cup milk
1 teaspoon vanilla extract
8 slices cinnamon raisin bread
2 cups crushed cereal flakes (corn, bran, etc) - We used Kashi 7 Whole Grain Flakes
1 cup whipped cream cheese
1 cup diced fresh strawberries
2 tsp powdered sugar
Oil

Directions:
Crack eggs into medium size shallow bowl, beat lightly with a fork. Add milk and vanilla and stir well.

Crush cereal flakes and place in a medium size shallow bowl.

Heat griddle or frying pan over medium heat.  Coat with a thin layer of oil.

Dip bread slices, one at a time, into the egg mixture.  Once each slice is coated with egg, dip both sides into the crushed cereal.  Dip only as many slices of bread that you will be cooking at one time.

Place bread slices in griddle or frying pan, heating slowly until golden brown. Flip over and brown the other side. Repeat with remaining bread slices.  If making additional slices, place cooked french toast on a cookie sheet and keep warm in a oven set to 250 degrees.

While french toast is cooking, mix cream cheese, diced strawberries and powdered sugar in a bowl.  Set aside.

Take one cooked slice of french toast and spread on 1-2 tablespoons of cream cheese mixture.  Top with another slice of french toast.  Repeat with remaining pieces.

Place two french toast sandwiches (4 slices) in a plate and slice diagonally.  

Serve hot, dusted with powered sugar and a side of maple syrup.
