Macaroni Menu ~ Egg Scramble Muffins

My kids LOVE eggs! But do I want to make them every single morning? Nope! So I threw something together a few weeks ago and they were a huge hit! AND I can make a whole pan of them and have several breakfasts ready and available, and even a quick lunch or dinner if I want!

Ingredients:
- 8 eggs
- Cooked bacon, sausage, ham or turkey
- Broccoli
- Shredded cheddar cheese
- Cooking spray

Directions:
Spray a 12 count muffin pan with cooking spray. I had some leftover bacon and broccoli so I put a little bit in each muffin cup. Whisk 8 eggs and add to each muffin cup. Top each one with a little shredded cheese. Bake at 375° for about 15 minutes.

You can use any cooked meat you'd like: sausage, cubed ham or turkey, whatever! I just happened to have bacon leftover. And the broccoli? They didn't say a word about it.  Next time I have leftover spinach, I'm going to try that!

Serve with a grain and a fruit and you've got a nice, easy meal! I am not kidding when I said my kids ate these several times during the week and when they asked for them again the following week, I made up another pan. For leftovers, place two in the microwave for 20 seconds.
