A healthier alternative to fried

Who doesn't love chicken nuggets?  They are a hit with both kids and adults, but not usually a healthy choice as they are typically deep fried.  A restaurant serving of chicken tenders can pack on as much as 1900 calories!  Cut the calories without sacrificing flavor by baking instead of frying.  Use our recipe to make restaurant style tenders that the whole family will enjoy.

Ingredients:

  • 2-3 boneless, skinless chicken breasts cut into strips or nuggets
  • salt and pepper
  • 2 egg whites, lightly beaten
  • 1 cup bread crumbs (I made crumbs in a food processor out of garlic croutons)
  • 1 tablespoon olive oil
  • optional: 2 tablespoons parmesan

Directions:

  1. Preheat oven to 425 degrees F.
  2. Coat a baking sheet with 1 tablespoon olive oil.
  3. Season chicken with salt and pepper.
  4. Place lightly beaten egg whites in a bowl and spread breadcrumbs on a plate.  You may choose to mix in parmesan with the bread crumbs for extra flavor.
  5. Dip chicken pieces in egg, then coat with bread crumb mixture, coating fully.
  6. Place breaded chicken on the greased cookie sheet.
  7. Bake for 10 min on each side, until the coating is lightly browned and chicken is cooked through.

Serve with your favorite dipping sauces (optional).  They taste great on their own!
