Macaroni Menu ~ A Nutritious & Colorful Fruit Rainbow

Serve up a fruit rainbow for breakfast on St. Patrick's Day... festive and pretty to look at, and healthy too!

Fruit Rainbow

  • Red fruit - strawberries, cherries, or raspberries
  • Orange fruit - peaches, oranges, tangerines, or clementines
  • Yellow fruit - pineapple tidbits, lemons, or mango
  • Green fruit - green grapes or kiwi
  • Blue fruit - blueberries, blackberries
  • Violet fruit - red grapes
  • Pot o'Gold - banana slices or yogurt with honey or agave syrup
  • optional - mini marshmallows

Wash and cut fruit to desired sizes. Arrange on a large platter to form arches of each color to form your rainbow.  Place mini marshmallows at the bottom left (optional) for clouds.  To make a pot o'gold, either serve sliced bananas in a cup on the right side or yogurt topped with honey or agave to make it "gold." For a serving of protein, we recommend the yogurt; your kids will love dipping the fruit to make this rainbow disappear!
