Macaroni Menu ~ Fortune Cookies

Fortune Cookie Day is September 13th

Here's a fun way to remind the ones you love how special they are: in a fortune cookie! This recipe is quick, easy, inexpensive and delicious, just the way we like it!


Ingredients:

  • 1 egg white
  • 1/8 teaspoon vanilla extract
  • 1 pinch of salt
  • 1/4 cup unbleached all-purpose flour
  • 1/4 cup white sugar

Directions:

Mix the egg white and vanilla until foamy but not stiff.   Then sift the flour, salt, and sugar and blend into the egg white mixture. The batter will be just a little bit runny.

Grease up a cookie sheet.  Place teaspoons of batter onto the cookie sheet and use the back of the spoon to spread thin.
 
Bake in the oven at 350 degrees for about 3-5 minutes or until the edges of the cookie are browned.
 
Using a metal spatula, quickly remove cookies carefully.  Place the fortune in the middle of the cookie and fold in half.
 
Using the side of a soup bowl or mug, place the center of the cookie at the rim, bend it in to form shape and leave to cool.  As it cools it will harden!
