Blackbelt Power Bites

By Joshua Page, Hickory NC Dad & MacKid Guest Writer March 13, 2018

This is a great healthy snack that is easy to make and portable! Fun to make with your kids and the recipe is as simple as 4 ingredients. Lots of room to experiment with different healthy foods to change the taste to your liking!

Here is our favorite version to get you started. Remember, the point is to have fun with these; experiment with different combinations and use the freshest and most simple ingredients keep it healthy, keep you going with clean fuel, and keep your snacks guilt free!

What you need:

  • 2 cups of nuts (cashews, almonds, or peanuts)
  • 1 cup of unsweetened coconut (shredded or flakes)
  • 1 cup of dates; we recommend Medjool dates (make sure they are pitted)
  • 2 spoonfuls of coconut oil
  • spoonful of local organic honey or 100 percent vanilla extract
  • Just a pinch of Himalayan Sea Salt
  • add any berries you would like; we like goji berries and golden berries to add some flavor

What to do:

  1. Prepare ingredients and add to food processor.

  2. Blend until everything is mixed together nicely and begins to form a nice clumpy, paste-like appearance. It will take a little bit of processing to get the natural oils in the dates and nuts to come out and start holding everything together.

  3. Once everything is mixed together, start to roll the mix into small bites. You can use a melon ball scoop, or just get in there with your hands!

  4. Arrange your bites in a container and store them in the freezer or in the fridge. We like starting in the freezer to get everything to set up.

Lastly, Enjoy! You have a healthy, portable, snack. Get up, get out, get moving!
